I only know a little bit of Japanese, and wouldn't call myself fluent by any means, would I struggle in Japan at my current level? I've only completed the first two classes of the intro series.

You will still be okay in Japan! Train stations and roads have English signage, and train workers and police at the neighborhood police boxes are very friendly and can give directions. Some Japanese people know a bit of English, but even the ones who do not will try their best to help you out. Restaurant menus typically have pictures, and some restaurants even have English menus! Personally, I would recommend getting down hiragana and katakana and some basic kanji as it helps a lot, which it sounds like you should already know from the amount of Japanese courses you have taken, so you should be fine. There are quite a few foreigners who go to Japan knowing no Japanese at all and they still get around!
