Generally speaking, you may find travelling to Eastern European (Poland, Czech Republic, Hungary, Slovenia, etc.) countries to be way more economical (they are still incredibly fun) than some of the Western European/Scandinavian countries (like England, Germany, France, Switzerland, Sweden, Norway, etc.) where you can definitely end up spending more than you want to!
Another good tip is timing. If you are flexible in terms of timeline of travelling you can often find killer deals on airfare and other amenities. I personally was able to find a flight for $19 from Paris to Poland (and I have heard of others find similar or better deals as well).
